Groceryships groups-- and group members-- are getting creative in the kitchen. This week, our ambassadors shared a fun, mix-and-match recipe called Sweet Potatoes a La Mexicana. Group members also showed off their stuff, sharing their own homemade, plant-based culinary creations!
This week's recipe highlighted the versatility of vegetables, with a build-your-own sweet potato topping bar.
Forget the bacon bits and sour cream! These flavorful baked sweet potatoes were reminiscent of nachos, piled high with nutrient dense and delicious options, including fresh guacamole, diced tomatoes, zesty lentils, greek yogurt, onions, lettuce, and spicy peppers.
This recipe is sure to be a hit with kids or picky eaters-- they can take extra of what they like, and leave what they don't.

But once again, our Ambassadors weren't the only ones demonstrating their culinary skills. Irma A. created a feast of vegetable-based meals for her family this week, including a vegetable stir-fry with ground turkey, spinach and egg tortillas, and a broccoli pasta with whole wheat noodles.
